Mothership Overnight Oats

A simple banana and apple overnight oats base that can be dressed up with seasonal fruit, nuts, or flavour variations.

Mothership Overnight Oats

Ingredients

  • 2 ripe bananas (320g)
  • 700ml semi-skimmed milk or your favourite unsweetened, fortified plant milk
  • 2 teaspoons vanilla bean paste

☘ Tip

Use 1 teaspoon of vanilla essence in place of the 2 teaspoons of vanilla bean paste.

  • 300g porridge oats
  • 2 eating apples

Use gluten-free oats to keep this recipe gluten-free, and your favourite unsweetened, fortified plant milk to keep it dairy-free and vegan.

Method

  1. In a blender, blitz the peeled bananas with the milk and vanilla until smooth, then pour over the oats in a bowl. Coarsely grate in the apples, mix well, cover, and refrigerate overnight.
  2. The next day, stir well and adjust the consistency with a little extra milk if needed. Serve as is with seasonal fruit, nuts, or seeds, or try one of Jamie’s flavour variations (Peach Melba, Cherry Bakewell, Berry Cheesecake, or Tiramisu), each paired with 220g of Mothership overnight oats.
